Instructions:
Best if served fresh and hot with a generous portion ice cream.
1) In a saucepan, combine cornstarch a cup of milk and whisk until the cornstarch is completely dissolved.
2) Stir in remaining milk, vanilla extract, and sugar.
3) Bring the mixture to a boil and continue to stir constantly.
4) Once boiling, pour into a baking tray or casserole dish, using a spatula to evenly distribute.
5) Cover the tray and refrigerate for 4 hours, or until firm.
6) In a bowl, beat egg and place breadcrumbs on a plate.
7) After chilled, use a sharp knife to cut the custard into small squares.
8) Dip each square in the egg and then coat with breadcrumbs.
9) In a medium sized frying pan, heat oil and butter (just enough to cover half and not fully submerge) and place the squares in hot oil. Brown each side (about 2 minutes).
10) In a small bowl, combine brown sugar with cinnamon, dusting squares to top.
11) Serve.
Tips: Use almond extract instead of vanilla for a slight change in custard flavor
Make sure that the custard sets very well before proceeding to the next step. This helps avoid a (delicious) mess. If possible, refrigerate past the recommended 4 hours.
